South Dakota State University Announces Dr. S.K. Dash as Adjunct ProfessorSouth Dakota State University has appointed Dr. S.K. Dash as an Adjunct Professor of the Department of Food Science and Nutrition. Dr. Dash has been instrumental in expanding the knowledge and furthering the research in the field of probiotics. As a probiotic pioneer, Dr. Dash has been responsible for many innovations in the field. At South Dakota State, he plans to work with the Head of Food Science and Nutrition and other faculty members to establish a strategy for new innovations and developments in probiotics. South Dakota State is in an excellent position to further the field with a strong knowledge base in Food Science, Nutrition, Biochemistry and Microbiology. Dr. Dash has many colleagues in industry, academia and medicine that may collaborate on furthering the understanding of probiotics and their benefit to human health, animal health and functional food products. Dr. Dash is an alumnus of South Dakota State University where he received his PhD in Nutrition, Microbiology and Biochemistry.

Probiotics in the US
The story of how probiotics got started in this country is a true David and Goliath story. When Dr. Dash was Director of the FDA in South Dakota, he had been following probiotic research since the usefulness of L. acidophilus was first demonstrated by Nobel laureate, Eli Mechnikoff. Dr. Dash learned that in the 1950s a probiotic product had actually been licensed by the USDA as a drug for treatment of a disease called scour in pigs and calves caused by E. coli infection. Further research by Dr. Dash revealed that the probiotic supplement was 97% effective in combating E. coli infection in pigs with a cure rate as effective as the standard antibiotic treatments used at the time. This new treatment lost the battle to large pharmaceutical firms with millions of dollars in marketing, research and development so probiotics were lost to the country for quite some time.

The Vision to See Probiotics Possibilities
Dr. Dash left his high-profile government job and began working closely researchers at the University of Nebraska and other universities. There, scientists had worked on a strain of Lactobacillus acidophilus now called DDS-1. DDS-1 L. acidophilus was being researched extensively with published papers showing its health benefits. Researchers found that this special strain possessed properties significant to digestion and health. For example, it produced enzymes (proteases and lipases) to aid digestion. Other benefits, of even more significance, were the strain’s antibacterial actions, which were effective against many of our food-borne pathogens. Today, more than 200 papers on this bacterial strain have been published in peer-reviewed scientific and medical journals. But at the time, DDS®-1 L. acidophilus was not commercially manufactured or available to the consumer. Thus, Dr. Dash formed UAS Laboratories, which became the first commercial manufacturer of DDS-1 L. acidophilus probiotic supplements that:
• Use a unique process of commercially producing, freeze-drying and naturally stabilizing the bacterium for delivery to consumers
• Introduce non-dairy, gluten-free, non-GMO probiotics
• Introduce quality control standards for probiotics requiring a guarantee of live bacteria (CFU/g) – now used as the standard, worldwide.
• Package probiotics with nitrogen to improve stability of probiotics
• Use in vitro, animal and human testing to prove that DDS-1 L. acidophilus can pass through the stomach acid, implant in the intestines and multiply 100 to 200-fold.
• Incorporate the prebiotic, fructooligosaccharides (FOS) with probiotics to enhance their growth in the intestines thus creating the synbiotic

Without these firsts, the probiotic industry could not have developed to be what it is today.

Dr. Dash continues to ensure that this industry continues to grow and maintain the high quality standards that consumers demand. He has been a very active Scientific Advisor and Vice President of the International Probiotics Association. He also served at National Nutrition Food Association’s Probiotic Committee and as the Chairman of the National Probiotic Products Committee from 1975 to 1980. Dr. Dash is author of the book, The Consumer’s Guide to Probiotics – A Complete Probiotic Source Book and a co-author of User’s Guide to Probiotics, Health Benefits of Probiotics and The Garden Within with Dr. Keith W.
